Thanks in part to Chicago pastry chef Dimitri Fayard, of Vanille Patisserie, Team USA creamed them all--not to mention teams from Russia, South Korea, Italy, Mexico, Belgium, and China--at the 2008 World Pastry Championships in Nashville, over Labor Day weekend. According to a press release from Keli Fayard (his wife), to help his team win the $50,000 prize, the highest a pastry chef in America can receive, Dimitri Fayard created "14 identical plated desserts, 3 identical 8-inch entremets [which are the perfect and pretty mousse cakes you see in French shops], 3 identical entremet glacer (ice cream cakes) and 3 different kinds of petits gateaux." Team USA also won Best Sugar Showcase and Best Degustation, or best overall taste. If you haven't ever been to Vanille (2229 N Clybourn Ave.), now might be a good time to pop in for a celebratory taste. |

Where can we purchase some of these Goodies??
They sound GREAT!
I think creamed is too strong a word. Take a look at the posted scores and you will see that Team USA did not cream Japan on artistic merit, nor did it run away with every aspect of the tasting. Belgium put up a good fight. The team won but being consistently excellent where other teams lost points in one category or another.
